Shredded zucchini and hash browns are mixed with green onions, a touch of lemon, and just enough flour to hold them together. Ingredients
1 medium zucchini, grated (about 1 1/2 cups)
1 1/2 cups Simply Potatoes® Shredded Hash Browns
2 green onions, thinly sliced (about 1/4 cup)
1 tsp granulated sugar
1/2 tsp salt
1 egg, beaten
2 tsp lemon juice
1/2 tsp lemon zest
1/4 cup all purpose flour
1 Tbs olive oil, plus more as needed
1 Tbs unsalted butter, plus more as needed
Directions
  1. Combine the zucchini, hash browns, onions, sugar and salt in a medium mixing bowl. Toss to combine. Add the egg, lemon juice and lemon zest. Stir until well-incorporated. Add the flour, mixing well. Heat 1 tablespoon of oil and 1 tablespoon of butter in a large cast-iron or nonstick skillet.
  2. Once the butter is melted and oil is hot, drop the zucchini mixture in tablespoonfuls into the skillet. Make sure not to crowd the pan. Cook for about 1 minute on each side until browned and semi-firm. Transfer to a plate lined with paper towels to drain. Repeat with remaining zucchini mixture, adding more oil and butter as necessary. Serve hot.
